Ross and Helen's long and successful restaurant careers saw the talented couple running a series of award-winning venues while collecting an impressive array of industry accolades. Ross and Helen's earlier restaurants in Brisbane included the Australian Gold Plate award-winning Pippin Took, Grand Orbit, and Dish Bar & Bistro.

Ross's driving force is his zeal for producing the best contemporary food consistently, with a true sense of hospitality and professionalism. Through the 1990’s Ross achieved accolades such as winning the Queensland Chef of Chefs competition, and being awarded the Academie Culinaire de France trophy for Young Australian Chef. Ross also won the Global Chef Challenge for the Pacific Rim in 2010 and was placed third for the world; and represented Australia at Bocuse D'or World Cuisine in Lyon, France; and won a host of medals at the International Culinary Olympics.

Ross is a member of the Academie Culinaire de France, reflecting his professional foundation in classical French cooking, which took seed at the age of 15, when he commenced his chef’s apprenticeship at the Crest International Hotel in Brisbane, learning his skill in classical French cooking that remains a foundation of his craft today.

The Plantation menus feature a colourful, exciting combination of seasonal ingredients in dishes such as haloumi, zucchini and corn fritters with tomato sugo and aioli; grilled knackwurst with kipfler and green onion salad and mustard mayo; and ham hock rillette with apple jelly, petit Waldorf salad and toasted baguette.

It's the main dishes where Ross' passion for classic French cooking comes to the fore, with choices including an eye fillet of beef with potato dauphinoise, chestnut mushrooms and cep cream; and corned lamb rump with fondant potatoes, pea puree and sugar snaps; or for dessert a thin apple tart with vanilla bean ice cream and calvados anglaise.

JUST a hop, skip and jump away from the Bundaberg regions lies a 4.5-star resort, Lagoons 1770 Resort and Spa, which will open its doors to the public on April 1.

Lagoons 1770 general manager Simon Della Santa said he is excited to bring a full-service product to the area.

"A lot of locals believe 1770 and Agnes Waters are locked in a time capsule," Mr Della Santa said.

"I want them to know we have just landed ashore and are about to crack the capsule open."

Mr Della Santa said the resort, which boasts 112 rooms, is the closest 4.5-star service in the area.

"To get this style and service people would have to travel north to Townsville's Peppers or south to Hervey Bay's Peppers," he said.

"It's absolutely great for the whole region to have something like this on our doorstep.

"We are at the southern end of the Great Barrier Reef - it's a magical part of the reef.

"We don't have the humidity, wet season, stingers or crocs here - so what better location."

The general manager said by opening a large resort it gives the region the ability to host more events now they can assist with the accommodation.

"Agnes and 1770 can have more festivals like the Blues and Roots as we can accommodate 112 rooms by three to four people per room," Mr Della Santa said.

"We tried to think outside the box for events, weekends away and weddings all in one.

"Without advertising we have already had so many wedding inquiries," Mr Della Santa added.
